At Miss Huddy’s Barbecue we believe great barbecue is an experience that brings people and communities together. That’s why every detail of our products matter.
Our goal is to create quality Central Texas-style barbecue and sides for our local community. Your satisfaction is why we love to cook!
The team
Pullman local, and former high school shop teacher Tim Schotzko, and his wife Molly (proud WSU alums), embarked on a journey to bring Central Texas-style barbecue to the Palouse years ago.
They value patience, hard-work, and humility, while remaining authentic to their roots.
They strive to instill the values of sustainable agriculture to the next generation, especially their own young daughter Hudson (Huddy).
Hand-crafted
We cook each of our meats up to 14 hours on our 500-gallon and 1000-gallon offset smokers. Our quality meats are flavored with Texas post oak, and seasoned with salt and pepper.
Sides are carefully crafted to complement our meats, using some recipes passed down generations.
We custom designed our mobile trailer to best serve you.
